According to Larry Vickers, the current Colts are the best ones they've ever built. He does know 1911s...

I would take a Colt, Springfield, or S&W E-series.

The SIG 1911s are extremely hit or miss.

Kimbers are great pistols...if you get one from the first series, known often by their place of manufacture, Clackamas, Oregon.

The later ones are built without any QC, so you make fluke in to a good one...but probably not.
 
Used Colt gets my vote. It's the real deal.

Got one that an old gunsmith friend 'tiddled up' for his own use years ago when we were hot & heavy into bullseye shooting. It shoots well but mainly I picked it up because of the sentimental reasons of who it had belonged to. Top left in the photo. The Kimber I just purchased is right under it.

I haven't shot the Kimber yet but I have to say it sure has a sweet trigger.

SW1911:
- External Extractor
- Oversize flared ejection port
- Full length Guide Rod
- Front and rear cocking Serrations
- Swartz (grip safety actuated) firing pin safety
- Steel firing pin
- Standard 1911 trigger
- Serrated front strap
- Standard muzzle crown

E Series
- Oversize external extractor
- Larger, more flared ejection port
- Full length guide rod
- Fish scale front and rear cocking serrations
- Slide-top serrations
- Titatanium firing pin and no FP safety
- 'Joubert' trigger system (adjustable for fit to frame, different geometry on the trigger rails in the frame)
- Checkered front strap
- Undercut trigger guard
- Chamfered and recessed muzzle crown
