Caps and powder are fairly easy to create. good enough to making meat.

if you are worried about your ability to make caps, go with a flinter.

Saltpetre is pretty much non existent around here.

I'm wondering if it has been put on some sort of list of banned chemicals.

when is the last time anyone tried to buy it?

Agree. Remington 1858 will kill all zombies in the post-apocalyptic world. Damn shame about reload time (since its a percussion gun), but its got alot of stopping power until you need to reload. Frame is stronger and alot easier to disassemble and clean than the Colt 1860 Army.

Saltpetre that you use to buy in the drug stores is now a controlled substance has been for a while

In any agricultural area you are surrounded by saltpeter. It just needs a little cleaning after collection. Or you can mine bird or bat poop. If ammo really bothers you, build a pellet bow. Clay balls were the standard ammo with occasional lead ones.
