Bird knife with the gut hook on it

Hey Andreas, I put a ruffed grouse in a paper bag ,guts and all, in the fridge for two weeks and it was great . No spoilage, don't know why but I'm still here. Of course I was still drinking then... JITC
 
Hanging makes a definite improvement to the taste and tenderness of game birds. Whether to hang game birds with the guts in or the guts out is a frequent debate. I've not yet done it with the guts in but some people insist the birds are better that way.
 
I guess the benefit to gutting rather than pulling is that it does help cool the meat, reduces carrying weight, keeps the meat cleaner, eliminates stomach acid from leaching into the meat. This is the preferred method if you're going to pluck the whole bird. If you're just going to breast it anyway, just keep a couple of sandwich baggies in your vest to put the breasts in (with attached wing, of course) to keep them clean.

I asked this question last year as well. I still haven't found a good quality knife with the birdhook. If you found one, please let me know what flavour it is.

Got a couple of these black delrin upland Remington knives from Natchez Shooting Supplies early this year. They have a choke wrench too.
