Butcher in Ottawa area for goose sausage?

Anyone use or know of a butcher in the Ottawa area that will do stuff with goose.

sausage, pepperettes, summer sausage ?

I'd try two places. I've gotten venison sausage made by both in the past.

There is a guy on Bank Street - I think its called the Bank Street Deli. He makes great sausage and his prices are reasonable. Very fast turn around time. He did 200 lbs of deer (3 kinds of sausage) in 3 days for me last year.

That's pretty good. Do you know where on Bank this guy is located?

There's also a place I took my deer to get butchered last year, "Back Country Butchers". They're located in Kinburn area.

Thanks for the posts guys that really helps out. The sausage kitchen will do goose.

here are some of the prices quoted when using pork with the goose.

2.00 / lb for sausage
2.00 / lb for pepperette
2.50 / lb ( I think ) for smoke sausage
3.00 / lb for summer sausage

They need a 25 lb minimum though, because of the way they do batches.

He did say that if you bring 25 lbs of meat, they would do 10 lbs of one sausage and 15 of pepperettes etc, etc, or whatever configuration you want.

I may check out the other ones, and I just heard about one in Navan, as well except that is a bit of a drive for me.

I do know my Dad goes to the Sausage Kitchen to buy
"Smoked Goose Breast" A very expensive delicacy.
