Butchering costs 2012

I picked up my doe from the butcher shop today. Delivered to the butcher was 97lbs. I got 26lbs of burger,10lbs of pepperettes and rest in steaks roasts and chops. The total cost was $137.
 
I just realized that not everyone has a place to cut up game or enough friends to help. I hope I did not come off as a know it all for my comment about cutting it yourself. For those who can't cut their own now, please try to in the future it is very rewarding.

I just realized I don't think I've ever taken one of my own animals to a butcher. :)

One thing I hear from people that do, is that butchers often charge by carcass weight. So at the very least, get rid of as much excess as you can, like debone it, cut off extra fat or whatever. I guess what you can remove depends on if you are going to hang it or it's ready for processing. Certainly skin the beast, though. Can't imagine wanting to pay for hide!
 
Dannys whole hog bbq in Stonewall MB is the best i've found around the Winnipeg area. $.50/lb cut/wrap/debone, sauasage is about $2.50/lb.hutterite chap who really knows what he's doing and its all vac packed to boot. one to stay away from is Wawels in Winnpeg, buddy had his moose done there just recently, the kubassa was a bland taseless mush that left a greasy fatty coating on your tongue, he was pretty choked about it, cost an arm and a leg too.
 
Couple of different butchers in my arrive charge 55.00 for any animal that produced less than 100 lbs of meat. I think it is 75 for less than 150. Haven't had any work for them yet this year.
 
We always cut our own, with just a hand meat saw and a few knives. We took a deer to a butcher once and we weren't happy with how it was cut. However my grandfather takes his to be cut, and ends up being around $150 (30lbs of sausage) For a 170ish pound deer
 
Ok, lets see what we are all paying, who's getting a deal, and who's getting jerked around.

We took our Bear to Nesbit Meats here in Lindsay. He has always been excellent to deal with, and has clean facilities.
Cost was $1.25 a pound, for the game as it is weighed when brought in.
This included steaks, roasts, and burger only, no sausage, or other fancy meats.

There was an additional charge for Pork fat, of $2.19 / lb.

We don't usually add pork fat at all, but the bear was huge, and Old judging by worn teeth, so fat was added.

Does the game have to be skinned out in order to take it there Bob?

Yes, and he's particular, or so he says. He tells me he will turn away dirty gutting jobs. Never has mine.
If it's a moose, it will need to be quartered. I took a 265lb Buck in there once, and it almost touched the floor in the cooler.

He does a good job, and I certainly wouldn't complain there. Close trimmed, and no issues ever.
 
Anyone know of a good place around kemptville, on? hoping to get my first this year. Those doing their own butchering; I guess you have a cool place to hang for 2-3 days? My understanding is it should hang at about 2-3 deg C?

if you took 2 adult moose in at that price, you'd be over $1000 to butcher. I'd be looking for my own industrial bandsaw and grinder instead. Wouldnt take long to pay it off with moose, deer, and bear.
