Butchering costs 2012

We always do our own deer so cost is packaging and a couple beers. Local fellow who works at a butcher shop cuts game on the side for $100 per deer. Don't know why shop won't do game anymore.
 
45 cents a pound for steak, roasts and burgers. clean, no hair, very professional. 2$ a pound for sausagification.

Last year though I did my own slice and dicing and much preffered it.

WOW! If I could convince people to pay me $100 bucks to cut & wrap a deer as a side gig, I'd have a season worth of hunting expenses and maybe a new rifle to hunt with and only work a couple days...that price seems rather lofty...but if people are happy to pay it then so be it...

min deer charge is i believe 80$ at south wapity meats .
I got lazy the other weekend so our 2 does are costin me lol
 
yowsers...I haven't brought an animal in to a butcher in about 8 years and then it was only b/c work called and wanted me to head north before I was scheduled to...I suppose I am just out of touch with what the costs should be...
 
if you took 2 adult moose in at that price, you'd be over $1000 to butcher. I'd be looking for my own industrial bandsaw and grinder instead. Wouldnt take long to pay it off with moose, deer, and bear.

Actually, when we do butcher our own, I prefer to bone it out, and grind the burger myself as well. I think you get more meat when you do it yourself, and are not pressed by the time constraints of running a business.
 
On the Queen Charlotte Islands it is $30/deer, cut, wrapped and frozen. The deer are small, mind you, at ~100lbs live weight.
 
I just got a call today that the sausages I had made up out of my goose meat were ready... Took them 23 lbs of goose meat, now I dont know how much pork or whatever they've added and I havnt picked it up yet so I dont know the total weight or how many packs of sausages.... Total bill $124 done locally.
 
What is wrong with hunters?? Unless you live in an apartment there is no reason not to do it yourself! Processing meat is part of the hunt, and a very enjoyable one to me at least. I have only taken two animals to a butcher, because of work commitments. Done over 200 critters by myself and with family. Maybe it is easier for me because I come from three generations of butchers. But it is not rocket science!
Buy a good set of butcher knives. Buy a grinder. A smokehouse is easy to build. Enjoy YOUR meat! And get more out of your hunt!

A friend of mine just had 2 moose returned from the butcher in Calgary. His bill totaled just under $1200. I believe it worked out to $1.69/lb. He thought it was quite a bit- but still much less than the $6.99/lb for beef roast at the supermarket. I guess its all how you look at it...
 
.80/lb hanging weight for cut and wrapped at H&M Meats in Grande Prairie. 1.99/lb for smoked farmer's sausages (pork added) on top of that and they are out of this world!

My father was a butcher and I grew up in a meatshop. He cut a lot of game. Hung for the right amount of time, clean, sausages with not a hint of wiff of mixing. He took pride in his work. I don't have space to cut my own. Like most things in life, I will pay top dollar for top product/service.
