Butcher's Bill = Soiled shorts

After butchering, cut + wrapping and making sausage I know it's alot of work, which is exactly why I do it all myself. The $ I spend working up loads and buying rifles etc. has to be recouped somehow. I don't hunt just for fun, I needs that food! Makes you aim better too. Usually get everything ground and stuffed in one day with a little help but I dont grind the good stuff.
 
well, i must say that i am quite happy with the venison pepperettes. ended up with 31-32lbs of dried pepperettes. works out to $4.50 per pound of smoked dried out meat or only $.45 per pepperette.


the initial price of $125 to get 50lbs of fresh meat made into these awesome little meat sticks was very pricey to me at first. seems cheap now...;)
 
Just picked up a whitetail doe for my brother. Cut and wrapped only. $38.75 total bill. They charge .45 cents a pound to cut and wrap. I believe that when we priced out sausage it was about 150.00 per animal?

Wow, $40.00 to cut and wrap, I doubt that butcher goes south every winter.
 
I just made 25 lbs of Italian sausage at home,DAMN they are good!!With the pork,spices and casings it cost me about $10-12.And I know it`s my well trimmed meat that went into them.I don`t do butchers anymore,too many bad experiances with quality and price.
