Camp cooking, spam

I made some corned beef fried up with some hash browns and onions and it was pretty good. It sure stuck to the ribs.
 
Last fall after getting my truck stuck, I sat on the roof and ate a can of spam. I love the stuff tastes like victory, or pork bits packed in rendered hoof.

Note to gun nuts: 2 wheel drives should not go where cat tails grow, it doesn't look stuck but when I got back in and tried to back up the ice brock and she was belly down in the muskeg.
 
The hunting camp fare is some of the best of the year for us - lobsters, 2" thick rib steaks, spare ribs, etc. We spoil ourselves.

The only time I've had Spam was by accident in Hawaii. They love the stuff and make sushi with it instead of fish. FAAAAHH! WTF?! Fresh ahi caught daily and you stick canned meat in your sushi?

Every once in a while I will make SKY HIGH SPAM BURGERS! ! ! The secret is to fry the spam with a thin coat of HEINZ ketchup. Then saute onions and mushrooms in the same pan and then deglaze said pan with an ounce of CROWN ROYAL and then reduce until thick. YUMMMERS ! ! ! ! !

Boil some moist potatos(canabecks from dads garden) mash em up. Add a can of corned beef, sauteed onion, one egg. mix well and form into pattie cakes. roll in flour,salt,pepper mix. Toss in hot skillet and brown each side. Serve with homemade sweet mustard pickles. yummmmy. As far as spam goes I've never tried it. Am i missin out?

I made this one recently when I knew that I was eating alone.
Ingrediants;
1 can Herefords luncheon meat (sliced)
1 can potatoes ( sliced)
half white onion (chopped)
pepper (yellow, red green whatever, I used and orange one chopped)
2 cloves garlic (minced)
1/2 Tbspn curry powder
1/2 Tbspn garam massalla
1/2 tbspn chillies
about 5 drops of Cheeches habenaro garlic mango sauce
sea salt & fresh ground pepper to taste

First I started with the potatoes in heated fry pan with olive oil lightly seasoned w/ s&p then added the sliced meat, combined all the dry ingrediants and threw all remaining ingrediants in fry pan moments later. I allowed this concoction to cook for about 10 minutes until potatoes & meat were nicely browned and onions/garlic caramelized.
Makes approx 4 servings.
I also tried Herefords Chopped Ham but that another episode ;)

Spam cubed with small cubed potatoes, onions and pepper with a generous splash of frank's red hot for breakfast..... (accompanied by a generously buttered slice of toasted crusty bread)

Lunch is Hereford's corned beef warmed on woodstove then sliced and served on rye bread with mustard and a generous side of ruffles poatatoe chips and a coke....

Supper = 3 thick cut Pork Loin chops with canned corn and crinkle cut french fries fried up in a cast iron pan on the stove smothered in BBQ sauce....

Caution... If you eat like me you may want to have a defribrolator handy in your camp...

Try that with a fried egg(s) (over easy & runny) over top of the corned beef hash and toast the rye bread with grape jelly and a spread of blue cheese........absolute deliciousness right there, Yes Sir!!!!
 
Eating it as I type... My girlfriend is Phillipino so trying it her family`s way: Use Hereford Corned Beef fried with onions, over easy eggs and rice. And don`t forget the coffee!
