Canada Goose....eatable or not

What are you guys on? Snows' and Canadas' are both good eating.

Cranes are - Ribeye of the Sky. Crane breasts and legs/thigh are like 12lb chickens, but taste better!
 
It is very edible. I have a nice goose with pasta recipe. It is the only way my wife likes the breast meat prepared. I have also made pulled goose from the thighs with my homemade bbq mixture. If anybody is interested pvt msg me and we can see about how to get a pdf of recipe to you. BTW i also have a good duck gumbo recipe that should work for goose, especially snow goose, as well.
 
The "avid" hunter might be trying to cover up his own inadequacy as a waterfowl hunter...if you can't shoot em, just say you don't like the meat and there's your excuse!
 
Sear the bottom on medium, don't go too hot here - play it a bit longer to get a nice crust. Let that go for a few mins and the spoon the top with hot butter like a steak you would a steak. Do that for a good minute or two, turn over and finish off to your desired temp but don't go too far, only a min or two! Let it rest for a few minutes and enjoy!
 
I pulled a plucked Canada goose out of the freezer a few days ago.
Covered it in Montreal Steak Spice and shoved it upside down in the slow cooker on a bed of onions. Added 1/4 bottle red.
Cooked on low off&on for 2 days.
Fall apart yum. So easy. Hard part is the plucking but you could just skin to save time/hassle.
My best results are if you treat wild geese like a cheap roast, such as an eye of round; hence why goose makes good jerky. I love them, but they're no prime rib.
 
I think you have to qualify what you call edible . I have eaten excellent tasting
wild goose meat , grain fed (sorry farmers) good clean water they flock too .

Other swamp raised , garbage eating (close to city living) non migrating geese
are inedible . Possibly smoking or heavy boiling may lessen the bad taste .

This is exactly my experience also.
 
Any recipe that makes groundhog edible could work for Canada Goose. Lots of seasoning and stewed heavily or made into jerky can work.

That's why I stopped hunting them - I couldn't even give the meat away.
 
I have had James Bay area goose done on a bbq where the drippings were saved for dipping. Enjoyed the goose and was surprised as I don’t like domestic goose. Came with bannock which is always great. I always worry about pellets but the folks doing the cooking were quite careful. Wouldn’t want city area geese given the crap they eat.
 
Grind up all the meat along with bacon and ground pork (for fat content and ease of grinding). add an egg, bit of bread crumbs or crushed corn flakes, spices, diced onions, grated cheese. Make burger patties and bbq. DELICIOUS!!
