How do you think the "exotic" meats wind up in a restaurant?

This is one of my main concerns about Canned hunts. I was served Elk once by a woman whose husband was just getting into hunting. She said "If I can buy Elk at the store , there is no reason for you guys to go hunting."
Since then I've heard this from 2 other people. Granted it's lame logic but anti hunters are lame anyway.

Going to a canned hunt is like going to a brothel. Doesn't beat the real thing and you have nothing to brag about, but....
