I am reloading for a 7mm rem mag and have cases at three different sizes. Seeing as i don't have a case trimmer yet, will it matter if i load 150gr barnes ttsx bullets with slightly different case lengths (.010" - .020")? My goal C.O.L. is 3.450 so i would be seating the bullets deeper in the 2.500 and 2.490 cases to achieve the same C.O.L.

Here is what i have for cases:
~40 cases measuring 2.500
~40 cases measuring 2.490
~20 cases measuring 2.480

The bullets will still be the same depth inside the case no matter the variation in brass length. The c.o.l. will be the same. As long as the brass isn't at max length for the cartridge (not too long, and pinching in the end of chamber), you'll be fine. Might not get your full accuracy potential though.
