Start small: rabbits, coons, etc. This way you learn the basics of tracking, shooting, skinning all without the trouble of getting a 150+ pound animal out of the woods.
Read what you can (especially if the books were written in your area) and most importantly know what you can and can not shoot. However, do not recite the advice in the books you read to the guy who teaching you; he'll give you some advice back and you won't like it!
