Clean Out the Deep Freeze NOW

I just pulled 3 packages of moose burger out of the freezer. The butcher that cut our moose the last time, vacuum seals all the cuts, in plastic.

That burger is 4 years old now and just as good as the day it went into the freezer.

Yep, vacuum sealing is the only way to freeze meat. Matter of fact, a few pounds of deer meat that went into my last batch of summer sausages were from a buddy who shot the deer last fall and had it butchered and wrapped in freezer paper. That meat had a stronger smell, was slightly brown, and maybe 20% was tossed because it was badly freezer burnt. I also used some deer meat from two seasons ago that was vacuum sealed and that meat barely had any smell, the meat was a normal reddish color, and there was zero freezer burn. The only waste was inedible silverskin.

A few years ago i did side by side comparisons with vacuum sealed, freezer paper wrapped, and double freezer bagged meat. Freezer paper and bags are a joke compared to vacuum sealing.
 
Im lucky, my elderly neighbors have a huge garden, I trade a portion of duck, goose and venison for fresh veggies. She asks all summer if I will be shooting lots of ducks this year. No set rules or anything, just something we have always shared.
 
well, we found 23lbs of vac-packed venison (marked for jerky) and 2 neck roasts (haven't had time to make jerky for quite a while). The roasts are in the slow cooker for 10 hrs for supper tonight and I'm taking the 23 lbs in for breakfast sausage this morning. The meat shop is between rushes at the moment, early moose is over and the rest haven't got going yet. The gals says bring it in today, and I'll likely get it back in less than a week. I guess we shoulda kept a closer eye on the supply in stock and taken it in a month or two ago. Our pepperette and smokie and salami supply will last a while yet, out of kubasaw and garlic coils. That's ok, we're getting a little ringed out anyway! I'm looking forward to fresh chunks for quick fry and more neck roasts.
 
My son and I just polished off some T-bones from a moose shot in 2011. I don't know how they got missed in the freezer, but
there they were down in the corner under some frozen fruit.

They were delicious, with only one small spot that had to be removed due to FB.
Properly packed, moose and Elk last a long time in the freezer.

Not suggesting you leave any meat for 5 years, but it helps to know that it may still be quite edible.
Vacuum packing is really great to keep meats well. Dave.

How do you bottle meat ?


Can it in jars like salmon. My wife makes roasts first, then cans the meat. You can do it with stew meat too. She first did it with a bear in 1976.

But as far as "cleaning out" the deep freeze, I don't see why I should do that. I have three boxes of deer meat and one of moose from last year and it's still good for another year.

I'm hunting this year just to get out and hopefully put my friends onto an animal.
 
just got back from Pine Falls, went to fetch my breakfast sausages. Vac-packed 6 to a pack. Gonna have some tomorrow morning for sure. I dropped off some packs to the cashier gals at the corner store and the store owners. We can give the bacon a rest now;)
 
To be honest, if your doing that your poaching. It's perfectly clear in the written regulations that it is unlawful to allow the meat to become unfit for human consumption.

Ok, I realize that things happen that we can't prevent that may cause some or even sometimes (such as the Slave Lake/Fort Mac fires) where we lose All! Of the meat crime the wild game we harvested that year, I don't mean to say that those people should/are criminilized. Rather, I was giving an extreme to try and make a point regarding those people that intentionally overharvest knowing full well that they will not consume it all and hence will throw it out. Also I was speaking based on the laws in my home province. I apologize for being, perhaps, too harsh.
