I've shot all in your list other than the XD. The Sig is a nice choice if a little "blocky" in the hand compared to the others. Not a biggie as I'm talking just enough to notice. If you wear a large or more glove don't give it a second thought.
I'm not partial to the plastic framed guns for target plinking just because the lighter weight tends to make them jump around a bit more. But out of a Glock (not sure which), the M&P, a Steyr, and one other they have at the range that I can't remember the name off at the moment the M&P was the one that made me smile the most.
As for a 1911 they are great guns but if you can't do it in .45 then I'd say go with something else. Yes they are available in 9mm if you get the right one but come on... this is a classic and to be true to the experience it NEEDS to be run with the ammo it was intended for. So that says to me that you want to shoot 45 through it to be faithful to the intent.... I suspect I'm going to get rather "warm" replies to this one.....
I also tried a few different steel framed pistols and in the end the CZ Shadow jumped out at me as the one that I was most accurate with and that fit my large to Xlarge glove size just right.
The Sig was very nice too. And with it having an alloy frame it was sort of right in the middle recoil wise between the neavier options and the plastic fantastic pistols.
Look at IPSC in your area as well. It's a great way to enjoy your new plinker pistol that much more.
Oh, and you NEED to have too hand plinkers. A semi and a wheelgun. It's in the rules.....
