The reciever is drilled and tapped and I understand that a Weaver #2 side mount scope base is what I require.

Will any scope rings fit that base or is a particular ring I need to source.

I plan on using a 1 inch tube size scope.
 
The Weaver base that you mention is used with either a Long or Short side mount rings - they are 1" Weaver style rings. Older Weaver mounts was like a formed or stamped metal that had rings for smaller tube scope integral with the side mount base. I have #1 and #2 bases here - all work with the same Long or Short Weaver 1" side mount ring assembly.

See picture below. Weaver Short ring assembly on that 1" diameter Bushnell Rimfire scope. Side Mount Base #2 is on that Cooey 60 that someone drilled and tapped for the hole spacing. Note the shim sticking out under front base screws - scope was significantly pointed to the right of the muzzle when first installed. A spare Short Side Ring assembly installed on a No. 1 base is below the front portion of the scope. A No. 1 and a No. 2 Weaver side mount base shown above the Cooey and below the scope.

How does the ring assembly attach to the #2 base ?

There are only 4 holes in the #2 base and all 4 holes are used to attach it to the rifle
 
There are six holes in the #2 base - you can see them clearly in the #2 base just above the Cooey in my picture - 4 holes for the mounting screws, plus two threaded holes to accept the thumb screws from the Long or Short ring assembly. The ring assembly sits on a dovetail on top edge of the base - so the ring assembly has to be slid back and forth to line up the holes, to tighten the thumb screws - attaching screws are slotted, but so far as I know only good firm thumb / finger pressure required. My Dad had the #1 base and short assembly on his M1917 30-06 at least 20 years??

Some years ago I installed a #2 base and short ring assembly on a Cooey 600 for an acquaintance. He supplied an inexpensive 1" body 3-9x32 scope - he was not overly concerned about parallax sighting error - until he passed a few years ago, he thought that he had tripled the accuracy of his old Cooey 600 with the rabbit on it. That might have been the cleaning I did - I do not think he had ever cleaned that bore in 40 plus years of ownership. Something is saying that it had the option for the dovetail rings, but it has been a few years - I am no longer certain - for sure I had the Weaver side mount stuff, but did not have the 3/8" dovetail rings for 1" scope - if his rifle had the dovetails on it ...
