I am guessing some of it may not be military surplus related.

I think the smg bolt and barrel are from a Star 1945. If the barrel is 9mm Largo, rather than 9x19, that would confirm it.
FN bolt?
Middle firing pin looks like a post '64 Winchester '94.
German 20mm shells.
 
Round bolt looks like an MP38/40 or variant such as a Portuguese FBP. Like Tiriag said it could be a Star Z-45 since that had a selective fire capability, the firing pin hole in the bolt face makes sense.

Rectangular bolt looks like FN FAL/L1 or SAFN49. Does it have any Caliber marking on the extractor? 7, none if for 7.9 & 7.65, 7 &30 marked.

OK, the smg bolt and barrel don't seem to belong together. The bolt is likely from a MP40. The barrel has a rather distinctive compensator. The Star, Bergmanns have comps like that. I don't recognize the proof. 8.83 would refer to the bore, the other number would be the serial. Is the barrel for a bottom feeder or a side feeder?
