Where would I source a place that will do custom etching/engraving/lasering?

Hopefully somewhere locally in the GTA/Ontario.

We do this sort of thing but are a tad further west.

Don't most malls have some sort of engraving store / kiosk.
Just bring the door in and get it engraved just like any other watch, plate, picture frame, etc.

I have tried two places at the mall and each didn't feel to confident about having it done.

I can source a laser etching place, but thought Id try here first.

There are tons of places in the US that do custom ones.

I've seen some that will even do a "picture" etched onto dust covers/dog tags...

Just google around for "custom dogtags" or some such and you'll find it fast enough
