Always fascinating to watch someone skilled at their trade. Forget the speed, pay attention to the cuts.
I'm going to watch this a lot before htg season starts as I've decided I'm getting too old to pack the bones. Last year I boned out the last 2 deer we took and was simply amazed at the weight difference. Now I want to get good at it. I've no idea if his way is the best, but it's the best looking way I've found.

To meet AB regs I plan on just leaving the one lower leg bone on the 1/4 I have the tag and proof of ###/species.

Wow. Those loins at the end are mouth watering.
You could take the torso after hes done, throw it on a grill and pick away at it for hours!
 
Sharp knife, eh? That hook does look like it is an important part of the operation.

Good observation with the hook... maybe hes been cut too many times before, or has arthritis from all the cold meat handling?...

Awesome butchering job, I noticed how he separated the Sirloin tip roast or steak.... from the rear leg and dividing down the bone to clear cut the round roast or steak.

I was waiting to see how to make shoulder chops like from the grocerie store with lamb... they have a bit of rib in them with the round bone and are very tasty.:D
 
Wow. I think I've watched that vid all the way through, about three times, and partway a bunch.

That guy is an artist with that knife.

Gonna watch it a few times through before I do the next deer up. Maybe it'll get me moving faster. Maybe not. Should improve my cutting a bit, though.

Does anyone know where I can buy a couple of those hooks? I haven't been able to find anything like them on any online butcher supply sites. My small "S" meathooks are too big to be practical, and the only option I've come up with is those skate lace tools, sharpen the end and increase the curve. (and they're not stainless steel)

Look like a very handy item not only for deboning, but also for skinning, and I suspect once a guy had one I'd also be using it when filleting fish.
