There is only so much you can do with a merganser (fish eater), if you're gonna shoot them do yourself a favour and learn a good gumbo recipe.i deep fried duck breasts once, and it tasted nasty....
probably cause it was a common merganser
ya i'm thinking of an outside propane burner, big pot, 350 degree oil, we do turkeys and chickens all the time so i figured duck would be the same, the ones i have are fresh and thick layer of fat so i would think i should leave the skin on,
thanks for the info, i have a bit of lake trout left along with some fresh grayling (still swiming in the river fresh, heading out tomorrow)
