Deer Butchering Video

That's a fantastic video. The idea of getting the cuts out of a deer seemed like an intimidating prospect, but after watching this a few times for reference, I think I'd be comfortable doing it myself rather than going to a butcher.

When I eventually get out there, I won't be afraid of giving it a try.
 
excellent video with as easy as they made it look i wont be sending next years deer to the butchers can do it myself now i just gotta find a video like that for bear
 
I had a real good butcher show me how to do this about 20 years ago. The difference in taste between venison cut with the bone left in, and deboned, is like night and day.

when you debone the front quarters, your not looking for steaks and roasts, your just getting trim . so cut away, theres really no rhyme or reason to do the front quarters

the hind quarters are for roast and steaks(read less tough, more tender) IMHO
 
It's the gutting and skinning part of the Deer that I'm not looking forward to, I'd like to find a video on this also. :)

There is so much grissle in the meat in the front legs that I fillet it out and usually grind the meat up.
 
I believe they guy said to make the front legs into hamburger. I glad this will help a lot of people. Maybe this should be made a sticky for quick reference during the hunting season?
 
Excellent video. I have been looking for something like this for a while. I started boning out my deer a couple of years ago and enjoy doing it and find the meat tastes much better. A have a manual grinder and make a lot of hamburger from the front shoulders, neck and rib meat. I do have a question, however. The strips of meat between the ribs seem to have a fairly thick membrane and I have been reluctant to grind it up. As well, the hocks at the lower part of the legs have so much sinew and connective tissue that it is almost impossible to get rid of it. What do the rest of you do with these pieces.

I know our doggies are going to love the deer scraps. :)

But then again they have been eating raw bones, meat, and blended veg most of their lives. So they have quite the choppers. :D
