Just did up some deer chops on the BBQ tonight for dinner. Tasty..

Nothing special, only cooked them about 7 mins overall and they were about medium-rare to medium cooked.. next time I'll cut it down to 6 min total.

no sauce, no marinate, just pure meat.

I ate it with a side of home made yam french fries. I deep fry them with pan of olive oil (not a deep fryer) then throw them in the oven for a few minutes to crisp up a little.
 
I used to marinate the chops with garlic, wine, rosemary etc but now I just salt and pepper put some olive oil on them so they dont stick and cook them on a hot bbq done rare. The first way is good but I like the venison taste more the second way. Dont overcook. Very tasty!!
 
My method is a little garlic and onion salt on each side, scorch them on high to seal in the juices, cook for 3 minutes on each side at med and devour!
MMMM backstrap steaks!!
 
I shot my first deer last fall - a tiny little doe that wouldn't have weighed more than 80 lbs or so. Anyhow, the wife was a bit unsure about how she would like eating bambi ;) so the butcher told me to start her with some chops on the BBQ. I brushed them with olive oil and some crushed garlic and salt and pepper, then seared them on a hot grill and cooked them to medium. We had another friend over who had never eaten wild game before. I put the meat on their plates and started eating my supper. I was so absorbed in my meal that I forgot all about them, until I looked up and BOTH of them were holding the bones of the chops in their hands to get at every last little fiber of meat on there! :D
They were SOLD! As long as I keep shooting fawns she'll be happy, but she may be in for a surprise when I finally come home with a big stinky old buck! lol!

Just had my mom over for dinner last Friday. Had DEER CHOPS (I'm not anal about spelling and such:jerkit:) sweet taters and asparagus all done on the BBQ. She doesn't get much wild game so I knew she would love it and the meal was amazing. Just a little spice in the morning and cook to med rare and enjoy with a nice dry red. Of coarse you must marinate yourself with a couple of cold ones while they are on the grill:D:D I always send her home with a roast and a pack of goose peperettes or summer sausage to keep her happy until her next visit.

Myself? Nothing beats bacon wrapped venison tender loin smothered
with fresh cracked peppercorns, done on a "charcoal" BBQ, very rare.

I love backstraps cut about 1" thick, lightly spiced with Montreal Steak Spice, and pounded flat between plastic wrap. Get the skillet (iron of course) good and hot with just a bit of grape seed oil (doesn't smoke), about a minute on each side. They are cooked thru, but not tough or dry.

All is good there is just a bunch of guys on here that ride guys about spelling and punctuation but who really cares were on an internet forum not writing a bar exam!!!!! Anyways what time is dinner pig chops and apple sauce sounds great!!!!:D:D:D

My BBQ is still under a pile of snow....:mad:

You need to break out your shovel then, my friend.:) I've only barbecued twice this winter, seeing we're caught in a mini ice age here in Sask, but both times went well. I usually butterfly my deer meat, but not these few times, left them about 1" thick.

A shot of Worcester? sauce, salt, pepper, garlic powder rubbed in and shes good to go. I set the reactor on full, so around 700 degrees F(temp gauge pegged) or so, and right around 2.5-3 minutes a side.

Gave the meat and rack a shot of Pam spray, and it can also be used to invoke flames, for that genuine flare up bar-b flavor. Good times.

2fat2fly: You ever use something like Lawrys Seasoning Salt along with your Montreal ?? It sounds like this. Chomp smack smack smack mmmmmm!

Deer chops is what the meat cutter wrote on the paper. Saying venison chops makes it sound like I went out and bought it at the grocery store..

must be a redneck thing indeed.....

Another thing I did with another bunch of chops was make a stew with them.. the DEER came out of the slow cooker perfect, just melted in the mouth. I tried to limit any oxo or anything so it would retain the DEER flavour. Was pretty good.

As for my girlfriend. I'd say I am medium lucky. She loves game but refuses to hunt.. so at least I have a welcome home for the meat.
 
You guys are killin' me! I've got a bit of deer, moose and a wee bit of bear in the freezer in in Kingston, and I'm in Edinburgh.............It'll be at least until summer before I can take a vacation and come home to pull some out.

ceriksson - we've got the cook time down to about four minutes - near blue inside but with enough heat that it just starts to crisp up on the outside.
