Dehydrating Sausage or peperettes.

I picked up a dehydrator and the question came up, can you take a venison summer sausage or pepperettes and cut them up and put them in the dehydrator to reduce weight and size?

I would think that you would seeing as the dehydrator would take all the moisture out of the product. I would try it, but check every hour to make sure its not to dry.
 
I think you would end up witha greasy mess. Summer sausage and pepperettes are 20-40% fat. It won't dehidrate, only the water out of the meat will dehidrate leaving you jerky smeared in fat. If you are going to dehidrate meat remove all the fat first. That being said I make jerky from lean ground meat and add my own spices then dehidrate.
