It's normal for early M91 refurbs and M24's to have varnished stocks - not all of them were varnished but many were. It's not a nice high-gloss finish. It was painted on right over rough, imperfect wood.
No M39's were varnished in service. they were finished in pine tar and maintained with hand-rubbed oil thereafter. Probably flax seed oil as they got their supplies from Germany during the bulk of the war and Germany used flax seed as well.
