Awww man, you live too far away to just drop in for a taste. I just bought a meat grinder. I will probably make patties instead of sausage. Is it your own recipe or a store bought spice pack.

110 degrees for 2 hours with smoke. Then smoke off and 140 degrees for 2 hours and raised temp 10 degrees every hour to 170 degrees. 170 degrees until internal temp got to 155 degrees.

WoW, looks awesome and I bet it even tastes better! Hope you have a Vac-Packer machine, keeps much better in the freezer for much longer.
