I have an over-under that I took apart to transport it.
When you remove the barrel the release lever go to extreme one side.
Can I let it that way for storage? Do I have to do something to make the release lever back into mid position? Will it damage the gun letting it in that position?
 
Make and model would help. If a Stoger you will see a little pin protruding out of the top of the receiver, it is hard to push but it will release the lever, just be sure to reopen before installing barrels

Depending on the make of that O/U - there should be a mechanism (somewhere inside the receiver/receiver face) that once depressed/moved will release the tension and thus shift the top lever (from extreme) to default position.

Yup, same with Berettas as well.

But, leaving it in the opened position won't hurt anything...

I always use a plastic pen or brass key & release the catch so that the lever returns to center (both sxs & O/U)

I have seen too many top-levers bent or broken from being transported while "open"
