Do you butcher your own deer?

We usually cut up our own game, have for years. The best thing I've done to help in that regard is to buy a good quality vacuum sealer. WAY better than paper and tape. My son and I de-boned and packaged up his deer in an hour. All that was left to do was jerky and sausage.

I skipped through that video. Too much babble, not enough getting to the point. For my tastes, anyways. The dude standing there asking questions about stuff other than what was going on was annoying.

I rather enjoyed watching a Brit guy by the name of Scott Rea process deer, etc. Search "The Scott Rea Project" on Youtube. Old school, knife and hand saw, and cleaver butchery. Some of the cuts he makes are a bit different than the North American cuts, but the end result is a good recovery from a carcass.

There are a LOT of deer butchering videos. None of them are wrong, if they work for you.

I always butcher my own game, it is a family tradition and an important part of the hunt for me. I'm giving thanks for a deer tonight, and grateful for the family connections. The carcass is being hoisted by the old cast iron winch that was originally installed on my grandfathers homestead and has been used by my family ever since, a hundred years or so. Butchering and making sausage from traditional recipes will come a little later.
 
Wow is that neck ever bulled out! Maybe just the angles, but it sure looks big!

Nice layer of fat still, though. Looking good!

Our collective deer club sends all kills to a butcher for processing.

The last one I killed outside the club I did it myself and made it all into pattie and link sausage including the hand grinding/casing stuffing.

I fatigued out both arms and now have an electric grinder. lol
 
I find it takes more than a day, by the time I trim silverskin and fat off, cut, grind, bag and wrap. That doesn't include jerky from trim and belly that you just wouldn't get from a butcher.
With all the cleanup, it costs me more in time than a butcher would cost.
At least if I do it, it's done how I want. The last deer I paid to have done was a disgrace.
If I cut this whitetail, I figure I've saved enough to buy me one of them semi auto 12 gauge sporters that Corwin arms are selling!

For the guys that don't let it hang , I do mine like this guy , I'm sure of getting every bit of gristle and all the silver skin I can off and hanging it UNTILL firm makes the meat work way better and easier

I've been a subscriber to "the Scott Rea Project" for a while now. He's got great vids on all kinds of meat. Highly recommended.
 
Going to butcher up the 2 elk we having hanging on the weekend. I have never done it before, but after paying $600.00 for 2 elk a couple years ago and having some of the best cuts magically disappear, I will do it myself from now on.

We jump in and did it made a lot mistakes and cut up a lot of stew meat and canned a lot of meat because I didn't know what I was doing buchering but it gets easier each year
 
I knew a gentleman who charged $25. to butcher deer for his neighbors. This was in Pennsylvania. Funny, even when he didn't get a deer his freezer was full of venison..how's that?
Do it myself after a few days hanging in the garage.
