Do you hang your birds?

Weather permitting I hang my birds for 5 days. Guts in depending on how they are shot. Big game can hang for 10-15 guts out. Temperatures should be 3-5c and the humidity should be low. Tasty!!!

I have a British wild game cook book that was given to me by my sister-in-law. Pretty well all of the recipes include things like hanging the birds, guts in, or in the case of woodcock, hanging the birds, guts in, then COOKING the birds, guts in. (You use the bill for a skewer BTW :shock: )

So anyways the likelihood of me ever following any of these recipes is, to put it mildly, remote. :roll: PM me with your address and I will mail it to you.

European woodcock are not exactly the same bird that we have here- the Brits birds are larger- but I know of people in the US and Canada that at least claim to eat the ones they shoot guts-in. Seeing that woodcock eat earthworms almost exclusively, I'm not terribly curious either, but if some presented me with one on a plate I'd do it.

I'm surprised not everyone knows that meat is aged- it does improve both the texture and the flavour. Every meat you eat except fish is better slightly decomposed, get used to it.
