MLP,
Not sure what you intend to do with the pistol, but since CCW is non existent in Canada - I don't understand why you would want the shorter barrel length (reference the models that you have chosen) - as opposed to the full length 5".
STI is more of a target "style" pistol whereas the other two would be considered defensive.
Each of them are quality pistols. My personal preference is Wilson Combat. The authorized dealer for WC in your area is P&D - contributing dealer for this forum. Speak to Chris (he is the handgun/WC expert guy there)

Personally, I prefer shooting shorter pistols, even though they are of no practical use over the longer barreled ones. I don't know why, but I always seem to be more accurate with them.

I find she points exceptionally well. Trigger is awesome. It is tight out of the box, but for me it was just stripping and cleaning issues. There are quite a few stories of guys having issues with the external extractor. Mine is an internal, and have had no feed or extraction failures to speek of.
As far as looks go, At first, I was a little aprehensive about the barrel protrusion, but after shooting the range model, and fondling a few of the showroom ones TSE brought in, I decided to go with the railed model. It definately gives it a new twist to your typical 1911. The frame on the pro II is full size (mine is steel as opposed to alloy as well) with shortened slide and barrel.
My advice if you haven't already done it, is go shoot the range Kimbers at TSE and get one of the Jameses to give you the lowdown on the service & milage of each on the range (they have a full size and pro IIRC)

Okay, just so you know, I am looking more towards a Kimber at this point. :)

So are there versions of the Kimber with an external extractor? I have seen external extractors on M-1911 models, but never thought about how reliable they would be. The rail was something I have been kind of keen on. I was oogling the Springer Operator for awhile there (I think I still do) and like the looks of a rail or at least a fuller dust cover.

I have been to TSE once recently, but circumstances have prevented me from going again. I did fire the XD9 and the P-226 (an old friend) while there and am planning on firing the Kimbers next visit, maybe in a few weeks when I have some money again...

PM me if you like. I'm a member there, so ammo at member prices on range guns & I'm sure I've got a free pass here somewhere.:)

That's not exactly correct. A certian US Special forces unit (starts with D) has recently purchased a large order of Tac 4.15s - and I doubt they're going to punch a lot of holes in paper with them.
