Knowing the weight of a gutted only animal, add 30% to that weight. Therefore, 30% from a 150 pound gutted only deer= 45 pounds. Total weight= 195 pounds.
The animal in question was skinned too.
Living as close to our hunting area as we do I have weighed several mule deer in the "round" and again after gutting and skinning. The bigger mule deer - say over 275 pounds live weight - tend to agree with the 65% rule posted above with their hide, head, lower legs and organs removed. The smaller deer - does and young bucks - have been 55% - 60% hanging compared to live weight.
If I had to guess I would say your 150 pounds of dead deer meat was around 210 on the hoof.

Just by the photo alone I would guess that stocky boy would indeed break 200 pounds. I suspect it has large traces of true mule deer in it's black tail ancestry which is very probable in areas where the 2 species overlap.
