If it's a good idea to made dried sausage with deer meat?

It's done all the time. You need to use #2 cure in it. For Landjaeger etc a culture starter is also needed.

I bought a pre mix bag of American garlic seasoning, to be fair it’s really nice.

I have ordered from Halfords in Edmonton, they carry a vast selection of seasonings.
Good to deal with and shipping is fast and relatively inexpensive

I am a novice but learning loads, it’s quite the science
