Looking for some information on a 6.5 Carcano with a double set trigger
that has been in my wife's family since WWI.

My wife's grandfather always refered to it as an italian sniper rifle. Any info
would be greatly appreciated.

they were bought as italian surplus by Eatons deptartment stores in the 30's IIRC. At that time they were fitted with a sporter stock, set triggers and rechambered from 6.5x52mm to 6.5x54mm.

I couldn't find any information on the web as to why this carcano had
a double set trigger.

Is this a sporting rifle, with a checkered pistol grip stock? If so, it is in all likelihood an Eatons/Cooey/Carcano.
If it is configured as a military 1891 long rifle, fitted with double set triggers, it could be a marksman's rifle. A photo of such a rifle was recently posted.
