Eating bear

I might try for a bear this year but only if they taste good. Im not interested in anything other than meat. What exactly does bear taste like? I heard its like pork. And have also heard it tastes like sh#t.

The quality of your bear meat is directly proportional to your care of the meat in the field and the butchers ability to trim fat and bone!
Bear meat is my number 1 pick.... when it is cared for and cooked properly, it tastes like baby beef to me.

Bear tastes like bear. You can't compare it. It's like trying to compare bugs to chicken. It has it's own unique taste. The bear I ate was very good, better than normal beef. If you cut it and prepare it well, it's "comparible" to venison.

stay away from dump bears!:eek: :rolleyes: (this is more an issue with Ontario
blacks than proper woods bears like you have in BC.)
They have a unique taste- when I had it at a friends', I thought it tasted a bit sweet. it was excellent. I suspect as Gatehouse indicates, that how they taste depends on thier diet.
 
bear is the best meat. makes for great sausage, wienners and ham too. i like the mountain bear feeding on blueberrys, nice and tender.
 
johnC, Excellent point, bears in around dairy farms, dumps, are not what your after, get as far way from people as you can. Bears that feed on berries for the main part of their diet are the best.
In spring these bears will be on southern ridges at green up, feeding on new green grass.Excellent eating , with very little if any game taste, not that there is anything wrong with that.

Bear is Excellent. My favorite, if you get one and don't at first like the meat you can always have the meat made into Pepperoni of other such saugage. And if you don't like that, I know someone that does ;) :rolleyes: ;)
 
I tried some smoked bear ham once, pretty good.
But, I had some bear made into medium spicy smokies and they're now my favourite wild meat. Score them, bbq them until they start splitting open and onto a grilled bun w/ sauerkraut, hot banana peppers and some mustard.
Drooling just thinking about them.

I think it's mostly how well you take care of the meat and what they've been eating. I can't imagine a bear whose diet consisted of used Pampers having a nice taste to the meat.:eek:

Yeah.. a friend of mine explained that you have to be careful where you hunt bears, as they're scavengers. Dump bears with an appetizer of some nice garbage fish, like suckers or carp anyone? :)
 
The berry fed bears are good, but let us not forget the fall grain fed bears in the prairie provinces. Several months of barley, oats and a little alfalfa on the side, makes for good bear meat.:)
 
Ok. So what your all saying is.......If the bear has a diaper stuck to his head, best not to shoot this bear?
Next question. Do bears smell bad up close and personal even if they havent been chowing down on a diaper? I heard they smell REAL BAD!!!
 
Nah, they don't smell bad. They do smell like bear though. That is something you can only know once you've been up close.

It's impossible to describe though. Musky, tangy, sour? I don't know.

A mature boar will have a noticeably stronger odour than a younger male or sow though.

Varmit is right you must get all the fat off. Also, the meat needs to be cooled quicly........ie, the bear needs to be gutted and skinned as soon as you can. I see lots of guys shoot a bear in the evening, leave it whole, take pictures the following morning and then skinit. This is not the way to go if you want to eat the meat from your bear, as it can sour quickly.
 
I have mine done half hamburg and half steaks. Mmmmmmm bear burgers. A lot of people I know prefer bear to deer and never have I had anyone dislike my burgers or chops, even first timers.
