Eating bear

I think it's mostly how well you take care of the meat and what they've been eating. I can't imagine a bear whose diet consisted of used Pampers having a nice taste to the meat.:eek:

Scuse the pun, but no sh t about the diapers, a few years back had to roust the bears at the Flin Flon dump to get my stuff back and one good sized cinnamon sow was chowin' down on baby guacamole. Gimme a big-mac any day.
 
A couple of weekends ago the Missus and I attended the Local Trappers Wild Game Supper . I had roast bear(tasted like a cross between pork and beef), Elk meat balls, buffalo sausage(my favourite), roast beaver, Lynx in a sweet & sour sauce (really nice...but chewy), pickled deer's tongue etc.
In the old days the Mother-in-Law said that they rendered out the bear fat....made the lightest, best tasting pie crusts and pastries around .
 
You know a few years back when I was outfitting we harvested a bear and got it back to camp right away. Did our business of photo's and such and then after skinning I cut a Good sized roast off the hind. We made it into cutlets and breaded them and cooked them in a roaster in the oven. The hunters we saying this is great venison;) They cleaned up the whole roaster!! When I told them they almost came unglued. I guess the thought of what we bait with and all the bear stories just grossed them out. But really it was pretty good! I never did that again!!!!
 
Spring bear?

Two general questions before this thread finishes:

Any issues with Spring bear vs. Fall? I hunt in Que. where there's still a Spring hunt. My hunt camp is well back from hydro and fast cooling is a concern.

Would most bear hunters dress and scrape the fat immediately? Just use a steel scraper like trappers use on raccoons?

Ya, like Algonquin said, how long can you waite before you bring it in to the butcher shop after the kill. I would'nt want to loose any meat...
 
I like it as well like mentioned before Sept hunting = warm weather get the meat cooled down, trim ASAP and debone ASAP, I take the hide off while steaming.
I like it done in smoke sausages, and hamburg is not bad. It is a sweet taste.
If going for an eater take a 200- lbs black bear at least 20 km away from any dump site or picnic park area.

Hey Guys...

Whoever told you that bear tastes like ####,, doesn't know what they are talking about...

Bear is one of the best meats going,, and if you get the right bear,, it has less of a wild taste than deer.

However you need to really cook the meat..
We found worms in several of the bears we took last year...

Black Bears are Awesome to eat,, and even better to hunt...
My Absolute favorite animal to hunt...

Makes great breakfast sausage too. Remove all fat...........as has been mentioned numerous times.................add pork fat, spices, etc. No one would know they are eating bear breakfast sausage.

Prepare yourself for the sweet/sour smell of bear blood, nothing like anything I have encountered. Love the meat but could do without that smell while skinning, not so much as foul but slowly starts to get annoying and almost sickening to me, and this from someone who loves the smell of skinning deer/elk/moose etc.
