Law in Ontario says you may not permit the flesh to spoil, doesn't say "YOU MUST EAT IT"!! I've eaten bear and it absolutley was digusting IMO. If I ever shoot one I'll feed it to my buddies dogs, not that I plan on shooting one, I am not going to eat it so won't bother unless it's causing me a problem.
I had a buddy eat a small amount of raccoon. My dad, his friends and myself all dared him to do so and but some $ towards it if he did. He ate it and kept it down but wasn't too happy until he was given $45 bucks....that cheered him up a lil.
A bear that's been eating from the corn fields is a pretty tender critter. Treat like pork, old school style pork, anyway. Cook it well, treat it all like it could be a source of Trichinosis.
But mostly I won't even fire a warning shot at one, in case I wing it and have to shoot it and clean it. Just no attraction in it, for me. more for the guys that want 'em I suppose.
I just stuffed last years cub in the freezer last night. Neighbours 17 year old kid shot it with a excaliber crossbow at 22 yards. I can't wait to get to cooking him up!
Open up the belly of everything you shoot, gives you an idea of what it's eating which could help in future hunts, and is interesting!!. Also small bear is just like roast beef, just dont get a huge fat old bear.
I've heard Bear is GOOD! I wouldn't shoot one anywhere near a dump... at 5km you can BET that bear has been eating garbage.
I want to shoot a bear this fall and put ALL of it into breakfast sausages. Used to live in Belleville (so Ont bear) and my buddies dad fed me bear breakfast sausages one morning. I loved them.
i have only had bear a few times and it was pretty tasty every time. now coon on the other hand i have a few good feeds every year. i plan on hunting them at night this fall...should be fun.
coon is very good meat as long as you get the animal from the bush. its main diet will be natural food with very little, if any, garbage. i like them roasted or stewed
people seem to think of some animals as nasty and they'd never eat them. squirrel is great and skunk is better than rabbit
I was told from older family members during the great depression down in the southern states if you had raccoon on your plate you were doing well as it was a main source of meat in many area's. Can't say I've had it but just some info to send out. As for bear you want to get as much fat off it as quick as possible and get it in a cold locker asap as the fat will start to rott quickly which can really effect the meat.

All the bear I have eaten has been mostly good, but prepared with very strong falvourings.. Garlic and redwine,.. curry,... etc...
Any that I have had simple fired up or as a roast... I'd eat it if I had no choice, but prefer to pass. Cornfield beers would be better I suspect, but I don't know...
Bear is good meat. Put a bear roast in the crock pot and add a bottle of dark beer, whole onions, a few cloves of garlic, salt and paprika. Let it cook for several hours and make a gravy with the beer/juices in the crockpot. Serve with brown and wild rice and corn on the side. It makes a great supper.
For coon, cut the hind quarters off and do it up on the barbecue after cutting the glands out.
I would eat either, but not if it was eating from a dump.
In Alberta which license is needed to hunt squirrel? I think they are classified as fur bearing animals or something...unlike rabbits which do not require a license.
