Eating waterfowl?

Anyone in the North Peace got a line on any currently being ravaged pea fields?? Every tip gets a strawberry pie!
 
This thread is making me very hungry.

I like roasting duck/goose with little potatoes and brussels sprouts or green beans, maybe some carrots, basted in a ton of butter.
 
I for one would LOVE to hit my bag limits for a few days. It will fill the freezer for a good while and help offset meat costs for a family of 7. I hunt because I enjoy it, even though it causes me a lot of pain in order to even get out for a day. It also supplements our meat costs in groceries.

I hope to get some early season geese so I can use the innards and leftovers for bear bait. Wouldn't mind getting a black bear this year as well.
 
Not a fan of geese, puddle ducks aren't bad...When I do cook them I usually make a stew or chili...most I turn into jerky which is pretty good...a few non-hunter friends treat me like a hero when I give them bags of duck/goose jerky :)
 
I have to admit, I am not a fan of any wild meat. From venison to goose, geese to moose. Not my cup of tea.

Lucky for me my wife, who never had any wild meat until she met me, has LOVED everything I have brought home.
 
Geese and big mallards are all my dad and I shoot.

We debone them, wash, and a 24 hour soak in salt water. Off to the freezer.

At the end of the season we take it in and get bratwursts made.:D

Smoked some this summer. Oh my were they good!
 
Sausages

In a few weeks I will begin my annual pilgrimage to Saskatchewan. Snow geese limits are 20/day and 60 birds possession... way more than I could ever use in 1 year in the roasting pan.... so...... Ground and seasoned these birds make fantastic breakfast sausage, pepperoni, and OMG smoked salami!

Most who try this goose sausage and don't know what it is, will guess its Moose, Venison Elk ... they never guess its mmmm goose!

Oh.. try grinding the meat and making pasta sauce.

We haul a good sized freezer , and every evening after cleaning the birds, vacuum pack them, 2 in a bag , each with a wing intact. Label each bag and make an inventory sheet.

Oh .. and while camping some of these birds make a wonderful stew (cooked fast in a small pressure cooker) along with garlic, onions, carrots, spuds, etc...

We've been eating sausage & goose gumbo and jalapeño/cheese/bacon/duck poppers since opening day. I've yet to have anyone not enjoy either.
