Favorite animal to eat or hunt

As a roast probably elan. In a chili or other loose meat dish or a stew its moose. For a steak I gotta say its beef, but bison is in the running. For birds, hungarian then sharptail. For sausage elk.For jerky bison.
If you’re hungry enough meat is meat though.
For hunting its tempting to say elephant but I’ll go with buffalo.
 
#1) Haida Gwaii Sitka black-tailed deer, they are unique. Buttery, sweet, succulent taste that in my opinion beats all other game animals, I am sure that salal berries are a big part of their diet. I also enjoy my time on the islands.

#2) Moose for taste and more challenging hunt, after the shot processing is a labor of love!
 
Favourite to eat and hunt are both the same: Early August caribou.

Moose, sheep, bison are all a close second.

I heard that if you take the tail and toss it on the coals of the fire until the skin peels off easily the inside dipped in butter is a lot like lobster?

Correct ..... beaver tail was considered a delicacy .... and I can confirm it is pretty good.

And very easy to grill .... just put it on the fire .... the thick skin will peal off easily afterwards ....

But I am not a lobster guy ..... I prefer a nice crispy piece of beaver meat (from the body) grilled over an open fire ....

I love all the deer.
Moose might be the best but I get it so rarely.
Blacktail is a close second and my family lives off it.
(Where I live we have Roosevelt elk in the yard almost daily, but LEH sigh)
I used to grind a lot of it for chili or pasta sauce etc but more and more i am making bone-in roasts and eating a lot of the prime cuts as tar-tar, tataki, carpaccio, etc.

Seems a shame to cook it.

3. Whitetail (hard to beat grain-fed)
4. Beaver
5. Porcupine
6. Snowshoe hare
7. Cougar (a rare treat)
8. Ducks
9. Grouse
10. Geese
11. Squirrel and woodchuck
12. House cats

When it comes to hunting, nothing more challenging than BT.
 
I like to hunt them all! But 3 are tied for first place... a covey of Hungarian partridge on the prairie over a well trained pointer... Whitetails somewhere in the Saskatchewan forest fringe, or Kudu in the rocks of the ancient volcanic kopjes of Namibia...
Best Local game to eat? - Elk and / or Ruffed grouse.
A little farther afield? Dall sheep, and close 2nd - early season Caribou.
Way further afield? Eland and Guinea fowl

Best single meal of game meat ever?

The heart of the Elephant that tried to kill me, and almost succeeded ( almost!)

I know it depends on the particular animal, but the elk I've had has been much better than any of the deer or moose.

I didn't enjoy my only goose thus far, bht at the time I didn't realize it could be pink, and overcooked the hell out of it 😳
