Went out today and managed my first hare. Was going for cottontails but in my excitment shot this beautiful creature anyway. Next time I will let the hare go :D

How do you guys skin these things? what do you do with the pelts afterwards?
 
If you didn't skin it yet, wear gloves to do so. I've heard bunnies can have tularemia or some such thing.

You should be able to find some videos on youtube for skinning.

Yes, not to scare you, but wear disposable gloves when you clean the rabbit and check the liver for white spots. The spots on the liver are the tell tale sign the animal has the disease...

I've only ever found it in ONE rabbit, and learned to wear gloves AFTER that experience...

Blasted saber is correct here, it's a jack rabbit or European Hare or, lepus europaeus and I am 100% sure of this. I have shot many, many jacks in Southern Ontario and that is 100% jack rabbit. Enjoy that jack and don't be so paranoid about eating or skinning it. It's way better for you than anything you buy in the store. Just cut it in 8 or 10 pieces and try it in the slow cooker or in the oven with potatoes, just as you would with chicken.....yuuuummmmmmmy.

It is a Jack.
Fillet the tenderloin meat out with a fish fillet knife and cook separate from back legs. And please do not be afraid to clean rabbits....I've never worn gloves and have cleaned way too many.

The backstraps are the long strips of tenderloin meat that run along each side of the animals spine. After skinning and gutting the rabbit you can take a sharp fish fillet knife and run it along the entire length of spine of the animal. This will give you two long strips of top choice meat. No ligaments, silver skin or joints of any kind and often no shot damage.
The back legs will have plenty of meat as well but you will find ligaments, great meat but not as tender.

p.s. Where about's do you live in southern Ontario? I'm down towards Windsor.
 
Brutus, don't confuse the young man. This is an ontario jack rabbit as we call them. It's official name..................ah just read my post above and check out the links...it's all there, no question about it, I can guarantee it, I've shot over 100 of these in the past 5 seasons and have chased and killed them my entire life. The varying hare or snow shoe rabbit is much smaller and all white this time of year.
