Answering your oringinal question i would go with the np29, i love mine....like you i always wanted a 1911 and i picked mine up for $300.
Again, thanks for all the replies. Especially those with first hand experience with either gun. Sounds like the SDVE is out for sure. I'm still leaning towards the NP29 as a first handgun to "play" with. I won't be sour if I burn $350 on a crappy gun as I likely could throw more money at it to have a decent shooter and still be under the price of most other 1911s on the market.
Though that Girsan MC28 for $400 has also piqued my interest, I wonder if I can find a better price? But really, that's one where I'd just pay a little more and get a used M&P range kit. I just need to find one to try. The local range that does rentals are stupid expensive. If anything I'll wait until I travel back to Edmonton and will go to the mall and pay my $80 and try all sorts of different 9mm.
Spend $400 and get a used Girsan Yavuz (Beretta copy) better gun then either of the guns mentioned in OP or an MandP.
To answer your questions
Edit Check you tube on how to do a quick deburring of the pistol when you first take it apart to clean the Chinesium oils the pistol is packaged with, this will smooth it out and prevent some marks appearing on the slide. This took me 20 minutes.
That would have been my choice too..congrats...they can run very well indeed...
