So we're super swamped at work, but I'm thinking about trying to sneak in a sit tommorow morning. If I were to get something, I won't have time before work to do a full process. With our current weather (tommorow will be around 5 degrees) would it be safe (meat temp wise) to leave a deer field dressed, hung up until after work (6ish)?
Cheers boys.

I wouldn't have any issues with leaving a deer hanging for a week at that temperature, given that it is in the shade and that 5C is the top temp during the day.

When I hang deer outside, I leave the hide on, when I hang it inside, I skin it right away. If you're hanging it outside, like some have already said, make sure it is hung high enough off the ground so the critters/coyotes can't get to it.

Cheers

safe hanging temps are 1degree to 6 degrees and is what every butcher i've talked to has told me..... and get the hide off right away. I don't care to debate that with anyone , cooling the meat is most important and cooling it right to the bone doesn't happen for days and days with the hide on. Only time the hide stays on is if the temperature is below zero and once it's in my shed, then the hide comes off. If the meat doesn't skin over in 24 to 48hrs it needs to be taken to a butcher's cooler right away.

anyways, skinned and hanging, between 1 and 6 degrees C, you can hang deer for 2 weeks easily but it may dry out left hanging too long. I like to hang for 5 days and butcher.

In Grey county we leave deer at that temperature for days skinned and hung in the barn or drive shed. We take the hide off as soon as it is hung as it is easier when the carcass is still warm. We have left them hung with temperatures higher than that with no ill effects.
