Hi guys,

So I went duck hunting yesterday, bagged a duck and a goose, I was in a rush when I got home so I didn't process them, I just threw them in the freezer, when I picked them up today they are frozen. Is it still safe to thaw them and if so how long do I have to thaw them before they are good enough to carve, if I can't thaw them today can I still do it tomorrow?

i say leave them frozen till your ready to cook them up

I am not an expert but i have frozen whole duck before ( usually after i clean 5 geese and a few duck and get lazy) gut and all, and have had no problem with them after. Only down side is trying to prevent it from freezer burn as it is openly exposed to the cold. They will stay fine for a while but not nearly as long as if they were processed correctly. if you plan on leaving them in for a while and are only planning on breasting them out you can take a pair of tin snips and cut along the side of the bird and take the bones and breast with the cut then just package the whole deal.

That it out in the fridge. It'll be fine. And you don't need to process them immediately, overnight won't hurt anything. I just lay them on their back on the cement in the garage.
