Depends how you package them. I've gone to vaccuum packing everything now, and I try to finish it up within a year. I've eaten deer, moose, elk, and beef that has been in the freezer for two years with no ill effects. Your mileage may vary.
if no air gets at them they won't freezer burn. Packed in water in milk cartons I have had meat stored 4-5 years with no problems, If poorly wrapped and bounced around the freezer they might be no good in 6 months.
The new vacuum bag systems are very good for preserving the eating quality of frozen meat, 2 years is no problem with my "foodsaver" bags.
Our cheapo "Foodsaver" vacum sealer is worth it's weight in gold. It's like a timex "used" to be.
We pkg things like pepperoni about 6 sticks/bag, just a nice snack for 2. I'm just brining some hams for easter that I pkg'd as roasts a few months ago. I find with the homemade hams we like the taste better, "fresher".
The vacum sealer means I can put roasts aside for brining/smoking at a later date. (months later, and then store the hams if need be. )
The sealer unit itself is pretty cheap, watch the prices on the rolls of plastic for it though, it really varies from store to store.
Not really what you asked, but freezer burn is a thing of the past for us now, and it used to be a regular concern so thought I'd mention it.
