Frozen Venison

Usually every year we have finished all of the venison in the freezer by June at the latest but this year I still have about 6 pounds of ground, a handfull of roasts (read band sawed deer necks for the slow cooker) and a few chops.

The question is is it still good? I have been travelling alot the past year and generally the venison doesn't make it out of the freezer unless I thaw it out(Kids and wife love it, it is just for some reason I harvested it so I have to cook it :rolleyes: ).

I was thinking that if we get another deer I would add the grind from last year to this years grind and make sausages. Opinions would be appreciated.
 
It will be fine as long as it was wrapped well and did not get freezer burnt. I have had deer and moose for nearly two years without any problem. Putting it into sausage will ensure that noone will know any difference.
 
I agree with horse_men, it should be OK as long as it was wrapped properly. I'm still working on my deer from last fall too... made a Shepard's Pie with some ground venison on Monday and it was fine.

That would be fine for sausages. I recommend that all the deer fat be removed and replaced with pork fat. It will taste alot better.

I still have a lot of venison too, but I haven't seen any problems with it so far.... I guess it is good in the freezer up to six months.. (say the specialists) so that means two years....

Please don't forget to wash everything with chlorine, antibacterial and don not crosscontaminate with the air... wear a mask and two pairs of gloves.... all made in China. :runaway:
 
I agree with pretty much everyone. I have been eating caribou now for 2 years and it seems fine to me, along with deer, goose etc. I keep mine in plastic bags in cardboard boxes, I think the cardboard seems to keep out the freezer burn longer. Now I have a vacuum sealer, so that should keep it just as long. But I would use the oldest stuff first for sausages, but I assume you were going to do that anyway.
 
same advice as above 2 years is fine

if your really worried make up a big batch of sausage and freeze them or make some chillie and freeze it in serving size bags. Great for when the wife is out and you have to feed yourself :) oh the horror
