got my bear sausage today, should I hang to dry it?

too bad, I forgot to ask meat cutter to make pepperoni and salami. my kids don't like the sausage. my father in law suggested that dry it up so it will taste better as now too much water in it.

any help is appreciated. I want my kids eat it.
 
I don't like to wreck my bear meat by having it made into any kind of sausage.

Besides, bear burger disappears into spaghetti sauce and kids like crazy.

Just what do you mean by "sausage" ?? The style of sausage, and its composition matter a lot! Spices, what kind of casings, pre-cooked or raw. cured or not, smoked, not smoked, etc etc. Talk to your butcher. You won't get any useful advice here without asking a more informed question.
 
Like the guys above have said is it cured or just ground with spice? If its cured and smoked (preserved) it can be hung for a bit. If its still raw in casings it has to be hung in a cooler or it will go bad in a short period. Talk to the butcher!!
 
thank you for the advice. it is uncooked sausage. just ground meat in casing. I might not hang them as they may get bad.

I will wait for next season to get another bear. will bring kids with to see the butcher. let them choose what they want. pepperoni, salami or whatever. I only want kids enjoy daddy's harvest.
 
there are lots of ways to eat cooked sausage.
One way is to boil it first to get a lot of the grease out (poke holes) then fry it.
Now that it is cooked:
Cut it up in to chunks and put it in spagetti sauce instead of meatballs
Slice/chop it and put it on home made pizza
Reheat it on the BBQ and eat on buns like hot dogs with sauerkraut etc

I find boiling it first helps a lot. YMMV
 
Bear meat cannot be eaten raw!! Uncooked sausage must either be thoroughly cooked or be frozen. As Longwalker said, trichinosis can be present in bear meat and is very painful or potentially deadly if not diagnosed.
