This mornings''Canada in the rough''featured groundhog shooting-saying how fat they were from eating clover-nobody mentioned eating them.My father, long gone now, grew up on the family farm in Huntsville ,Muskoka and he says he shot many a groundhog which was served up as ''field rabbit'' even for company.He said they just cooked it like rabbit or chicken,and it was just as good.Don't hear of anybody eating it these days though,but that was part of my upbringing-''you eat what you shoot'',unless it was vermin
 
I've had many a ground hog. When you skin them in September and find a 1/2"layer of white" fat you know they are good eating!Trouble is I do'nt have any on the farm anymore. JITC
 
It's red meat and they stink worse that a skunk!
Killed one and skinned and cut it up for my bird. My hands smelled of groundhog for two days afterwards. Couldn't wash the smell off.
 
ground hog tastes great if you get one in the mid summer or fall cook it up like a pot roast have eaten literally around 50-55 and always look forward to the next one
 
it's a vegetarian, same as rabbit and squirrel. i think it's mind over matter. try porcupine, the meat's a bit stringy but if you parboil it first, it's very tender and tasty.
