Both are excellent pistols.
I debated back and forth on exactly these two and ended up buying the HK USP Custom Sport. In the end it came down to comfort and personal preference. The HK fit my hand better, as well as my wife's. She's right handed, I'm left, so the ambi mag release was also a factor for us.
The prices are pretty close on both, especially if you shop around. Both can be found used or refurbished, and are still neck and neck in price.
Despite purchasing the USP, I'm still a fan of the Sig, though I preferred the P229 I shot in Ohio over the P226.
I think that like TheCanuck said, it ultimately comes down to personal preference.
