Help Bar B Q rib recipe!

Making comptition quality BBQ ribs at home is pretty easy just follow a few easy tips.

1. Rinse ribs and remove silver skin (look up on web).
2. Rub the ribs with a good rub (lots of ideas here) and let sit for min of one hour.
3. Smoker smoker smoker (or at least smoke box on BBQ) low and slow at 225f
Use the 3/2/1 method for back ribs or 2/2/1 for side ribs. I prefer back ribs due to less fat and go 3 hour on smoker bone side down, 2 hour wrapped in tinfoil if fav liquid (normally apple juice). After this two hours the meat should be pulling back exposing a half inch of rib bone and be pretty much falling apart. Last one hour return to the smoker and start adding sauce 30 min before finished. I normally just use sweet baby rays sauce with a little added jack Daniels.
 
Today I tried alter3d rub adding cinnamon and nutmeg to his recipe as suggested by BMoney . Adding Grumpy Wolverine's BBQ Jack Daniel's sauce at the end, and let me tell you, these are THE BEST ribs I've ever had.

Rub the ribs with alter3d's rub the night before. The next day, smoke yours ribs for about an hour and then wrap them in thin foil for an additionnal 3 hours. Put Grumpy Wolverine sauce on and grill them on both sides until the sauce has caramelized.

BBQ Rub

4 tbsp firmly packed brown sugar
2 tbsp sweet paprika
2 tbsp smoked paprika
3 tbsp black pepper
3 tbsp coarse salt
2 tsp garlic powder
2 tsp onion powder
2 tsp celery seeds
1 tsp ground cumin (preferably, start with whole seeds, toast them and then grind in a mortar & pestle)
1 tsp cayenne pepper
1 tsp cinnamon
1/2 tsp nutmeg

This one is a favourite of mine. It also always turns out better if you are sipping Jack Daniels while BBQ'ing those ribs. Jack Daniels Single Barrel is a good choice although any good bourbon will work
•Jack Daniels, about 1/2 to 3/4 cup, or to taste
•1/2 cup chopped onion
• 4 cloves garlic, finely chopped
• 2 cups ketchup
• 1/3 cup vinegar
•3 tablespoons
•Worcestershire sauce
•1/2 cup brown sugar, firmly packed
•3/4 cup molasses
• 1/2 teaspoon pepper
•1/2 tablespoon salt
•1/4 cup tomato paste
• 1 teaspoon Liquid Smoke
•1/2 teaspoon Tabasco sauce, or to taste

Preparation:

Combine onion, garlic and Jack Daniels in a 3 quart saucepan. Sauté until translucent, about 10 minutes. Add all remaining ingredients, bring to boil. Simmer uncovered until reduced and thickened, about 15 to 25 minutes. Add more Jack Daniels if a stronger flavor is desired.
 
Now this recipe has been tested I will use it for the staff Bar-B-Q this Sat. Spare ribs, meat balls and poached sausage, the poached sausage is a favorite of mine. I use a large cast skillet, layer with onions, cover in Guinness, two large scoops of honey and then poach the sausage, lightly brown on the grill and finish the onions, use good English Pork Sausage, AKA "Bangers" and of course the "House speciality" beans, a secret mix with a secret sauce, even I can,t remember the exact sauce mix, based on HP and made to taste.
