Hitch mounted game hoist?

Thanks guys, I've just found a buddy with some welding experience and he's agreed to help with the project. I'm looking to use this rig for deer/ black bear, so game up to 350 lbs. Anything more would seem like a lot of leverage on a hitch. A gambrel is a great idea but how do you keep the carcass from twisting as your skinning?
 
i made one out of 2 3/8 drill stem work great but i would put a grease nipple in the collar where the 2 3/8 spins. after mine was in the snow u couldnt move it around at all . and seize up .. but i like the idea of tubing with a collar or 2 to support it off the hitch. then u can pick the game up and spin it around into yr box.
 
My buddy built one at work a couple years ago and we used it to skin a few deer and it worked great. But when he shot a cow elk and we tried to lift it to skin it the front wheels on his truck were almost off the ground and we thought that the rear leafs were gonna snap. It would work good for loading though as we almost had the tailgate on the ground.
