To do what? You can't carry it so your options are pretty much limited to IPSC/IDPA kit. Mind you, that doesn't mean you can't have whatever holster you want.
Try your hand at making your own. Tandy's has books with patterns and the leather. Albeit not exactly cheap leather.
 
it also depends on what 1911 you have- if it's ww2 or ww1, it's kind of nice to have the correct holster or a close copy- if it's tricked out whatever, even uncle mikes is in the running- i kind of like the super slide
 
x2 for Mernickle. I also have a black hills lether holster that is quite nice. You can expect to wait a few months if you order from either of those guys though. My next holster will be another Mernickle

What is physically stopping anyone from carrying a firearm, the law?? There are those who either a) don't give a damn about the law(criminals) and b) those who are of sound mind and are unwilling to abide by retarded laws designed to waste money and erode ones civil liberties/rights.

I'm not saying anyone is/isn't/should/shouldn't carry a firearm. I'm just saying that there's nothing that physically prevents an individual from carrying one. A holster is important in the event someone wishes to carry.

Oh, and other than IPSC and IDPA. There are three gun matches, cowboy action, and several choices for professional training offered in Canada as well.
