Butchers do beef. Beef is not bled out in the bush by being shot. Their opinions are based on beef.
Got a Butcher shop on both sides; my daughter works at Deerview Meats down the road and my son married into Premium Sausage. They both handle Deer, Elk, Pork, Lamb and Beef. DV can handle them from the back of the truck undressed if the hunter wishes, Premium prefers them dressed I believe....both say " Sure, we'll hang it "
But both also say " Other than cooling, there is no reason to hang it. Beef is the meat that improves with aging...not wild game "
Doubted it myself the 1st time I heard it. But I didn't doubt it the 2nd nor the 3rd time ( reconnected with an old friend who is certified to inspect meat on a provincial level )
Our family always hung deer, that's ' How it was done '
Not any more, why put my fingers in my ears and protest against fact...madness
Edit; sometimes I forget that I'm a lot closer to the Wild Game side of things than a lot of folks. Beg Pardon on not mentioning ' Butcher's knowledgeable of wild game handling ' in my first posting.
