how long do you hang Deer?

Hi guys I was just wondering how long to hang Deer
I usualy hang it for a week but only because I'm hunting and don't want to do it then and there
We usualy wait till we have three or four in the cooler before we start to butcher
thoughts...
 
I here two different opinions usually
One is you don't have to hang deer at all because there is no fat in the meat and hanging it just looses moisture and weight
The other is you hang it because that’s how we always did it :?
 
I hang mine for as long as I can.Depends on how long I am hunting and the weather.I have a cool room so can hang it for a while when I get it home.I like at least seven days.
Hanging is supposed to be good for the meat.Butchers always hang their meat for
the same reason whatever that is.Starts a chemicle reaction or something.
 
If the weather is cool enough let them hang for a week, in the past few years it has been warm and the deer were skinned within the hour of being shot and butchered before the end of the week, straight into the freezer.
 
Depends how tired i am and how warm the garage is. I honestly don't think it matters if you freeze them fresh. However too long and my non hunting friends complain about the gamey taste and really bad farts the next day. Bacterial overload I would guess.
 
Depends on temp and humidity. As the temp goes up you hanging time goes down. Also the lower your humidity the more dried out your game will end up. However too much humidity is bad too.

If you search the internet you'll find quite a bit of information regarding aging of meat. The is acutally quite an art to aging meat. You shouldn't try to age wild meat as long a cattle because of the fat content of the meat.

You can also fast age meat at a warmer temp for a short period of time, but you have to be on top of your game and know when its done. The room for error with fast aging is very narrow.

On a cold season, we have hung them for two full weeks with no problems, in fact, I think that venison was extra tasty. Took it out frozen solid if I remember right. It had several freeze thaw cycles. But how much thawing occured is debatable.

but only if i get one in the morning :wink:
I also want to try the (debone him out in the field without gutting him) thing

But i'll probably chicken out and gut and clean him :D

Really depends on when I have time to cut it up. Could be up to 10-14 days if my boys have a hockey tournament. :D

At the right temp, you have a a few days to play with.
